Breakfast people are the best people (in my opinion). And if you’re one of my fav people you’re going to L-O-V-E this so-simple recipe. It’s delicious, nutritious, and packs a mad punch of energy.
I’ll be honest — I eat this mid-morning (after my first breakfast of 2 scrambled eggs) when I’m sitting at my desk feeling my energy levels dwindle and listening to my tummy grumble. I’m what you’d call a “grazer,” as in, I eat ALL day long. So separating my breakfast into 2 parts makes me feel like I’m getting more food. Weird? I don’t care.
Here’s what you’ll need for 1 serving (feel free to make a week’s worth though!):
- 1/2 cup oats
- 1 tbsp. chia seeds
- 3 tbsp. egg whites (YES egg whites are OK to eat raw)
- 1/4 cup frozen berries
- 1 tbsp. almond butter
- 1/3 banana
- 1/4 cup almond milk
Here’s what you do:
- Put all the dry ingredients into a plastic container or jar
- Add fruit
- Add liquid
- Mix together
- Leave in fridge overnight
It’s THAT simple. You’ll start your day with a good amount of protein, a serving of fruit, healthy carbs to keep you fueled, protein for your gains, and good fats! Also, your taste buds will be dancing.
Other toppings/add-ins you could use:
- Other nut butters
- Protein powder
- Greek yogurt
- Nuts
- Seeds
- Cinnamon
- Cacao nibs
