OK, so I may be slightly obsessed with her food since she’s one of my favorite humans, but today I’m sharing another delicious recipe from Devon (DevonJade.com). It just happens to be my favorite thing on Earth: TACOS. So continue reading for a quick recipe that will become a staple in your food prep.

I totally threw stuff together the first time I these and they turned out tasting absolutely amazing, so I obviously had to make them again for you guys! And I would be lying if I said I didn’t eat this meal 2x in one week…it’s THAT good. As a Celiac it is hard to find a good Mexican restaurant that I can 100% trust to be gluten free, so I was super thrilled when this meal turned out good.

As always, this recipe is good for you so you don’t have to feel crappy (no pun intended) afterward (sorry Taco Bell). They are grain free, dairy free, and flat out mouthwatering! I hope you enjoy them as much as I did!

Gluten Free Chicken Tacos w/ avocado lime sauce

Makes about 6 tacos

Ingredients

[FOR THE TACOS]

  • 1 pound of grass fed, organic chicken breast tenderloins
  • 1 green bell pepper, chopped into thin slices
  • 1 red bell pepper, chopped into thin slices
  • 1 small yellow onion, chopped into thin slices
  • Grain free tortillas (I use the brand Siete)
  • 2 cups rice, cooked
  • 1 can of black beans
  • 1 tablespoon of avocado oil
  • 1 teaspoon of chili powder
  • ¼ teaspoon of onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • salt and pepper to taste

[FOR THE AVOCADO LIME SAUCE]

  • 1 large avocado
  • 1 lime
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 teaspoon cilantro
  • salt and pepper to taste

Instructions

  • Begin by placing the chicken breast tenderloins in a large sauce pan, fill with water until all the chicken is covered. Bring the water to a roaring boil. Once boiling, turn off heat and let the chicken sit covered for 15-20 minutes.
  • While the chicken is cooking, in a large frying pan, add in the avocado oil, chopped peppers and onions, and salt and pepper. Let them cook over medium heat until slightly charred.
  • For the sauce- in a bowl mash up the avocado and then add in the garlic, onion, cilantro, salt, pepper, and lime. The lime juice should be just enough to get it to a paste-like consistency. (Feel free to use a food processor for this step).
  • Once the chicken is finished cooking, shred it into a large bowl. After all the chicken is shredded, add in the chili, garlic, onion, and paprika. Toss to combine and coat the chicken.
  • When everything is finished cooking grab your grain free tortillas and evenly spread on the avocado lime sauce. Add your chicken and fajita veggies.
  • Add rice and black beans on the side or add them in your taco!
